Barberry is one of the well-known fruits that is cultivated in Iran. Because 95% of the world’s barberry is supplied by South Khorasan in Iran. Therefore, it is one of the advantageous items in Iran’s exports. First of all, we must say that the meaning of red barberry is only in the way of processing and drying it. In addition to red barberry, we also have black barberry. Unlike red barberry, which is mainly cultivated in South Khorasan, black barberry in the northern regions of the Iran is available but barberry varieties:

Puffy Barberry

This type of barberry is marketed from 2 to 6 months after the first harvest, because its production process is longer than Pomegranate barberry. But on the other hand, it has a redder and better color than other types of barberry. At the same time, its price is higher than other red barberries.

The production process of Puffy barberry is such that the cut branches of barberry (like grape clusters for raisin production) are hung to dry.

This process requires a very large space for air to flow between the branches and the moisture between the clusters is removed and the barberry is prevented from spoiling . For this issue, they also use large fans that are turned on 24 hours a day. Since these barberries are not exposed to sunlight and hot air flow, it retains its natural red color and finally, after inflating and sorting, it is packaged and enters the market.

Puffy barberry is a type of exported barberry due to its quality and natural red color.

Pomegranate Barberry

The production process of Pomegranate Barberry  is such that it starts immediately after harvest in October. For this purpose, the barberry is spread on a flat surface called the threshing floor while it is not yet separated from the branch, and it is exposed to direct sunlight to dry. In order to obtain a one-handed product, it is constantly moved up and down. This also prevents rot of barberry.

After drying, the barberries are so-called inflated. This means that the leaves are separated from the seeds of the main crop by wind or in natural space or by creating artificial wind.

The barberries are then stored in plastic-free cartons in a cool place away from sunlight until further processing.

Finally, after this stage, the barberries are placed in the sorting machine to remove the thorns and debris, leaves and stones attached to the barberry and it is ready to be packed.

This type of barberry has a lower quality than other types of barberry , but since it is cheaper, it also has more customers.

Mountain barberry

Unlike other types of barberry grown in South Khorasan, mountain barberry grows on its own in the northern regions of Iran, such as Bojnourd and the Golestan forest margin and therefore has a lower production volume than other types of barberry. It is more rare. Its color is also bolder and different than the other two types of barberry.
